Overview

This is a one-year part time vocational programme and is designed for learners who are seeking to develop practical culinary skills and knowledge in preparation to work as a chef in the catering and hospitality sector

This qualification will provide you with a range of practical skills covering:

  • Prepare and cook food by boiling poaching and steaming
  • Prepare and cook food by stewing and braising
  • Prepare and cook food by baking, roasting and grilling
  • Prepare and cook food by deep frying and shallow frying
  • Prepare and cook stock, soups, and sauces
  • Prepare and cook fruit and vegetables
  • Prepare and cook meat and offal
  • Prepare and cook poultry
  • Prepare and cook fish and shellfish
  • Produce hot and cold desserts and puddings
  • Prepare and cook rice, grains, and egg dishes

Requirements

No formal entry qualifications are required.

All courses within Belfast Met are delivered and assessed in English, apart from language-specific courses. Your competence in English must be verified prior to enrolling on your chosen course.

Careers

As a chef, you cook food and prepare ingredients as part of a team.  You will need to be able to work under pressure as kitchens can be intense working environments.  Most chefs start as kitchen assistants with the aim to progress your career to head chef.

On successful completion the college offers progression to the Level 3 in Professional Cookery on a part-time basis.
