FDQ Level 2 Award in Food Safety for the Food Industry (603/6390/3)
Overview
This one-year course is suitable for anyone who wishes to pursue a career as a professional chef. This qualification offers a balance of practical skills and classroom theory, it provides students with an opportunity to develop knowledge and understanding of the skills and competencies required to work effectively in the modern culinary environment. This course is based in industry as well as college and students will be supported to gain valuable experience within a commercial kitchen.
Topics of study will include:
- Safe, Hygienic, and secure Working environments in Hospitality
- Effective Teamwork
- Food Safety in catering
- Principles of how to maintain, handle and clean knives
- Preparation, Cooking and Finishing of Vegetable Dishes
- Preparation, Cooking and Finishing of Poultry Dishes
- Preparation, Cooking and Finishing of Fish Dishes
- Preparation, Cooking and Finishing of Meat Dishes
This programme is the equivalent of 5 GCSE’s and will include study of GCSE English and Maths.
A personal training plan will be developed to detail your training pathway within the chosen vocational area.
This programme of study is likely to include additional enrichment activities/module(s) which are included to enhance your employability.

Academic course entry requirements
To enrol on Apprenticeships NI, you must be with an employer who is willing to send you to college.
Non-academic course entry requirements
Important: All applicants must also meet the following conditions:
- be 16 years old by 1 July 2026.
- provide proof of:
§ Right to Study in the UK. For courses with work placement, proof of your right to work in the UK is also required.
§ Photographic proof of identity
- Provide translated copies of and/or demonstrate equivalency of non-UK qualifications.

Proof of qualifications MUST be provided when you enrol e.g. exam certificates.
Achieved and pending qualifications can be recorded on your online application account.
All courses within Belfast Met are delivered and assessed in English, with the exception of language specific courses. Your competence in English must be verified prior to enrolling on your chosen course.

All fees are set in accordance with DfE regulations.
This course tuition fee is fully funded by the Department for the Economy.
Assessment will take place through portfolio building, multiple choice testing, practical culinary assessment and professional discussions.

This course is suited for those wishing to become a professional chef, you will gain knowledge and experience that will help you pursue career development as a Commis Chef or Chef de Partie. There are also opportunities to progress to Level 3 professional cookery programmes.
