Overview

This two-year FDQ Level 2 Diploma in Professional Chef Qualification (Northern Ireland) is designed for learners who wish to work as a chef in the catering and hospitality sector.  The qualification units cover the preparation and cooking of ingredients such as meat and poultry, fish, fruit and vegetables, eggs, pasta, and desserts – using many different cooking methods. The qualification also covers hospitality teamwork plus the food safety and hygiene skills vital for success as a chef.

Modules covered are:

  • Prepare and cook food by boiling poaching and steaming.
  • Prepare and cook food by stewing and braising.
  • Prepare and cook food by baking, roasting and grilling.
  • Prepare and cook food by deep frying and shallow frying.
  • Prepare and cook stock, soups, and sauces.
  • Prepare and cook fruit and vegetables.
  • Prepare and cook meat and offal.
  • Prepare and cook poultry.
  • Prepare and cook fish and shellfish.
  • Produce hot and cold desserts and puddings.
  • Prepare and cook rice, grains, and egg dishes.

If required, you may also be able to undertake the study of Essential Skills in Literacy and Numeracy for those who have not achieved level 2 or equivalent in these subjects.

  • Applicants must also hold a minimum of 4 GCSEs at grades A-G with a minimum E in Mathematics and English.  
  • It is essential that you possess the commitment, enthusiasm and positive attitude required to succeed in this customer-facing industry.  

Proof of qualifications MUST be provided when you enrol, e.g., exam certificates.

Achieved and pending qualifications can be recorded now by logging into your online application account.

All courses within Belfast Met are delivered and assessed in English, apart from language-specific courses. Your competence in English must be verified prior to enrolling on your chosen course.

Entry requirements can change and be discussed on an individual basis if necessary.

In the event of undersubscription, course criteria may be lowered.

Fees

All fees are set in accordance with DfE regulations.

This course tuition fee is fully funded by the Department for the Economy. 

Students are required to supply their own kit, approximate cost £150.00.  Lists of kit requirements will be given once student is enrolled.

Assessment

Students will build an online portfolio made up of 16 separate assessments compiled over a 2-year period. When completed, a multiple choice test paper, a culinary challenge (designing and cooking a 3 -course meal) and a professional discussion will complete the end point final assessment.

As a chef, you cook food and prepare ingredients as part of a team.  You will need to be able to work under pressure as kitchens can be intense working environments.  On completion of this course, you will be qualified to work at commis chef level.
